The Monday Sandwich

Mondays are hard, aren't they? It's not as much about the weekend that is now over and done with, but the fact that you have these five whole days of work ahead of you. 

Just staring you in the face.

And you still have memories of a great weekend.

But the weekend is gone. 

And that's very sad. 

I was feeling like that a Monday ago. Then I made this sandwich. And I felt better. 

This was more or less inspired off the Grilled Chicken Pesto Sandwich found on Closet Cooking. You'll notice that I added a pickle instead of lettuce. And switched the mozzarella with cheddar. Just a few more things that we in the fridge.




It's not a fantastic looking sandwich and as you can see from the cellphone picture, I wasn't meaning to make it into a post, but it was really such a good satisfying meal that I had to include it. Afterwards, it felt like the best of all possible endings to Monday.

  9. Hi sweety, at least Monday has passed by quickly, it was a freezing 6 degree day here. The sandwich looks so yum, nice combination of ingredients, it must have tasted great. In reply to your Q...SA is very different to Spain, because even though we have very modern looking cities and amenities, we are still a third world country that's in the process of bettering ourselves. Theres still too much pollution, lack of education, no decent public transport system and sadly, quite a few slums. So Spain and Europe was a completely different experience to that.

    1. I actually had no idea! I would have never thought of SA as a third world country. Perhaps compared with the rest of the continent, it seems so much better off.
