Il Corvo is a fabulous pasta joint in Downtown Seattle. It's near Pioneer Square, at every day at lunch time, the line is out the door by 11:45.
I worked right by this joint, but I didn't find a good time to visit until lately, when I popped in right before it closed. And now I understand why people wait in lines. This pasta is truly delicious.
I've had a lot of dried pasta in my life. The difference between that and fresh pasta is... mindblowing. The texture is completely different. Fresh pasta, which Il Corvo uses, is chewier, more eggy, and as my descriptive words fail me, tastier. The flavor is also just right! Often times, I find myself wanting to put sriracha on my food to give it a little bit something extra. The pasta here is cheesy, but not so cheesy that it coats your mouth. It's spicy, but just enough that it enhances other flavors. It's salty, but not so much that it makes you crave a coke to cut through the salt and grease.
If you find yourself working or visiting Seattle, it's a must try.
